Ingredients

  • 1 hen turkey, 8 to 10 lb.
  • 1 large brown gravy bag
  • shortening

Instructions

  1. Thaw
  2. turkey completely.
  3. Remove inside packages.
  4. Cook neck in 4 cups of water to make stock; set aside for gravy and dressing.
  5. Rinse turkey, pat dry with paper towel. Grease the inside
  6. of paper bag with shortening and place turkey inside. Roll
  7. up
  8. end
  9. and place
  10. in
  11. roasting
  12. pan,
  13. breast side up. Preheat oven
  14. to
  15. 325°
  16. and bake on lower rack for about 2 1/2 hours.
  17. Turkey
  18. cooks much faster using this method and browns well.
  19. Cut away
  20. brown
  21. bag
  22. carefully.
  23. Cool for at least 20 minutes before carving.
