Boiled New Potatoes

Ingredients

  • 1 pound new potatoes, cleaned
  • 1/2 teaspoon salt
  • 2 tablespoons butter or margarine, melted
  • 1/4 teaspoon white pepper

Instructions

  1. Combine potatoes, salt, and 1 inch water in a medium saucepan. Bring to a boil. Reduce heat; cover and simmer 20 minutes or until tender. Drain.
  2. Pare a 1-inch strip around center of each potato. Combine butter and pepper. Add potatoes, and toss lightly to coat well. Serve immediately.
