Ingredients

  • 6 cups water
  • 4 cups pecan halves
  • 1/2 cup sugar
  • salt to taste

Instructions

  1. Bring 6 cups of water to a boil in a large saucepan.
  2. Add pecan halves; return to boil for 1 minute.
  3. Drain in a colander and rinse under very hot tap water.
  4. Shake to remove excess water.
  5. Place pecans in a large bowl.
  6. Add 1/2 cup of sugar and stir well until sugar is dissolved.
  7. Fry pecans in deep fat at 425°F (220°C) for 5 minutes.
  8. Remove pecans from oil and drain.
  9. Place pecans on brown paper and sprinkle with salt while hot.
  10. Store in an airtight container.
