Ingredients

  • 1 ds dry basil)
  • 1 x egg beaten
  • 1 x thin slices beef or possibly veal
  • 4 Tbsp. extra virgin olive oil per c. of bread (pounded to tenderize) crumbs flavored bread crumbs, (bread salt and pepper crumbs, grated cheese tomato sauce, (sufficient to parsley, dash of oregano almost cover)

Instructions

  1. Lb.
  2. the slices of meat as thin as possible.
  3. Make a mix of bread crumbs, egg and oil.
  4. Lay meat out and lightly salt and pepper each piece.
  5. Place some of the mix on each piece and spread covering most of the meat except the edges.
  6. Roll and secure with a toothpick.
  7. Lightly brown each in a bit of butter and oil.
  8. When browned place in oven proof dish.
  9. To the browning pan add in tomato sauce and mix to get all flavor from bottom of pan.
  10. Pour over meat and bake in oven at 350 for 45 min Turn often to prevent drying.
  11. Serving suggestions.
  12. Mashed potatoes with a touch of garlic while mashing.
  13. The sauce makes a wonderful tasty gravy.
  14. A bright veg such as carrots or possibly broccoli.
  15. Crust bread and a salad.
