Bread And Apple Pudding

- Remove crusts from bread and cut in quarters.
- Peel and slice apples.
- Combine apples with the water and let simmer on low heat until barely tender.
- Add 1/2 cup sugar.
- Stir gently (don't break apples).
- Place bread in buttered casserole dish packing closely together.
- Cover bread with the apples and juice.
- Beat egg yolks until light.
- Add milk and vanilla.
- Mix well and pour over pudding.
- Dot with bits of butter.
- Bake 20 minutes.
- Beat egg whites until stiff.
- Add sugar.
- Spread over pudding and brown in oven.
