Brown County Fried Biscuits

Instructions
- Sprinkle yeast in the fourth cup of warm water and let dissolve; set aside.
- In a large mixing bowl, combine flour, salt and sugar.
- Stir in melted shortening, dissolved yeast and milk. Stir until dough is smooth.
- Cover bowl with damp cloth and let rise to double in bulk.
- Pull off pieces and roll lightly into balls 1 1/2 inches in diameter.
- Drop into hot fat a few at a time. Cook 2 to 3 minutes on each side until puffy and browned.
- Remove with slotted spoon.
- Drain biscuits on paper towel.
- Serve immediately with butter and apple butter.
