Brunch Rice

Ingredients

  • 2 c. cooked rice (mix brown and white)
  • 5 strips crisp bacon (save 2 Tbsp. drippings)
  • 8 oz. Cheddar cheese, grated
  • 1 grated carrot
  • 1/4 c. milk

Instructions

  1. Cook rice as follows:
  2. boil 2 cups water; add a pinch of salt. Pour in 1/2 cup long grain brown rice and return to boil.
  3. Add 1/2 cup long grain white rice and return to boil, then reduce heat to simmer.
  4. Cook for about 30 minutes without stirring.
  5. Set aside.
