Ingredients

  • 2 cans Mexi-Corn (11 Oz. Cans)
  • 1 whole Lime, Juiced
  • 1 Tablespoon Mayonnaise (light Works Great, Too)
  • 1 teaspoon Cayenne Pepper

Instructions

  1. Open and drain the corn.
  2. Put it into a serving bowl.
  3. Mix in the lime juice, mayonnaise, cayenne pepper and shredded cheese.
  4. Add some salt and pepper, to taste.
  5. If you want some additional kick, add some hot peppers!
