Catfish Mull

Ingredients

  • 5 lb. catfish (I prefer filets)
  • 5 lb. onions
  • 1 doz. large potatoes
  • 1 lb. fat back
  • salt and pepper to taste

Instructions

  1. Fry fat back, preferably in cast-iron pot with lid.
  2. Remove fat back from pot.
  3. Put a layer of onions, layer of fish, etc. Lay whole peeled potatoes on top.
  4. Add seasoning and oleo.
  5. Put lid on pot; cook until potatoes are done.
  6. Will serve at least 12 people.
