Chipotle Cheese Rice

Ingredients

  • 2-1/2 cups Water
  • 1 cup Brown Rice (I Used Mahatma Brand)
  • 1 teaspoon Salt
  • 2 whole Chipotle Peppers In Adobo
  • 3/4 cups Grated Cheese (pepper Jack Or Other)

Instructions

  1. Bring the water to a boil in a small pot. Add the rice and salt. Reduce heat to low and cover to simmer for 40 minutes.
  2. Chop up the chipotle peppers and add it to the rice anytime during cooking.
  3. Keep an eye on the rice starting at about 35 minutes to make sure that it doesn't burn if it's done prematurely. When you've confirmed that it is nice and tender, stir in the cheese of your choice. I also added cayenne pepper, which is great if you're really looking for spiciness, but probably intolerable for most households.
  4. Tastes great when served with slices of fresh avacado!
  5. (This may serve more than 3, but I am assuming you really like it and want to eat a lot.)
