Chipotle Orange Glaze

Ingredients

  • 2 cups light corn syrup
  • 3 cups orange juice
  • 1 tablespoon chipotle pepper, crushed (or 2 whole peppers)

Instructions

  1. Note: peppers can be fresh or dried and do not have to be re-hydrated prior to use.
  2. Bring OJ and corn syrup to a simmer.
  3. Add the chipotle.
  4. Simmer for 2 to 3 hours until reduced to desired consistancy.
  5. (about 2 cups).
  6. Don't rush the reduction.
  7. [stir frequently and watch for burning and boil over].
  8. Strain and cool.
  9. Use at room temperature.
