- Prepare pudding mix according to package directions
- using skim milk.
- Prepare whipped topping according to package directions substituting peppermint for vanilla and using skim milk. Fold 1/2 cup topping and food coloring together.
- Combine remaining whipped topping and pudding.
- Divide pudding into 8 dishes and top with 1 tablespoon colored topping. Freeze up to 2 hours and let set at room temperature for 15 minutes before serving. Serves 8.
