Country Bread

Instructions
- Dissolve yeast in warm water.
- Stir in sugar, salt, eggs and oil.
- Add 3 cups of flour.
- Beat until smooth.
- Mix enough flour to make dough easy to handle.
- Turn dough onto lightly floured surface.
- Knead until smooth about 8 to 10 minutes.
- Place in greased bowl.
- Turn greased side up.
- Cover and let rise in warm place about 1 hour.
- Punch down; cut in half.
- Roll each half into 1 x 8 x 9-inch rectangle.
- Roll dough from 9-inch side.
- Place into two 9 x 5 x 3-inch pans.
- Brush with oil.
- Let rise until about double (about 1 hour).
- Heat oven to 375°.
- Bake 30 to 35 minutes until golden brown.
- Test for doneness by tapping top to sound hollow.
- Remove from pans.
