Crawfish Pot Pie

Ingredients

  • 1 1/2 lb. crawfish tails
  • 1 onion, chopped
  • 4 to 5 potatoes, diced
  • 1 (16 oz.) pkg. mixed vegetables
  • 1 pkg. Pioneer chicken gravy mix
  • 2 (9-inch) pie shells

Instructions

  1. Cook vegetables according to package directions; drain.
  2. Boil potatoes until tender.
  3. Saute onion in a little butter.
  4. Prepare gravy mix according to package.
  5. Mix crawfish, potatoes, vegetables and onions together with gravy.
  6. Pour into unbaked pie shell.
  7. Cover top with second pie crust.
  8. Cut a few slits in top of crust.
  9. Flute edges.
  10. Bake at 350° for 30 to 45 minutes or until golden brown.
  11. Let sit for 5 minutes.
