Crispy Curried Potatoes

Ingredients

  • 1 pound Red Creamer Potatoes, Peeled
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Fresh Chives, Chopped
  • 1/4 teaspoons Garlic Powder
  • 1/4 teaspoons Cinnamon
  • 1/2 teaspoons Curry Powder
  • Salt And Pepper, to taste

Instructions

  1. Add the peeled potatoes into a pot of boiling salted water and cook for about 15 minutes or until they can be pierced with the tip of a knife. Drain off the water and return potatoes to the pot. Set aside.
  2. Preheat oven to 400 F.
  3. In a small bowl, combine the olive oil, chives, garlic powder, cinnamon and curry powder. Pour the mixture over the warm potatoes and stir gently to combine. Season with salt and pepper.
  4. Place the potatoes on a rimmed baking sheet that you've lined with parchment paper and roast in a 400 F oven for approximately 30 minutes or until they are lightly golden brown.
