Crispy fried smelts

Ingredients

  • 1 packages smelt fish
  • 1/2 cup all-purpose flour
  • 1 tsp sea salt
  • 1/2 tsp smoked sweet paprika

Instructions

  1. Pour enough oil to cover a frying pan and heat on medium high.
  2. Combine flour, salt, and paprika in a bowl.
  3. Dredge smelts in the flour/spice mixture.
  4. When the oil is hot add the dredged smelts and cook until golden brown.
  5. Set cooked smelts onto a paper towel to absorb some of the oil.
  6. Serve right away.
  7. Squeeze lemon onto cooked fish.
  8. The heads can be cut off before frying.
