Crispy potato rounds

- In microwave, cook cleaned , skin on potatoes until tender.
- You may bake them in the oven until tender.
- Times depend on potato size.
- Once potato is cool to touch, cut medallion slices 1/2" thick.
- In hot skillet on just below medium heat add 2 teaspoons oil.
- Add in potato slices and leave unturned until bottom gets crispy and golden.
- About 10 minutes.
- Drizzle next 2 teaspoons of oil on top of potatoes along with salt, pepper and garlic powder and parsley
- Flip and cook until crisp on second side.
- Serve with your favorite breakfast or as a different potato side with hamburgers or chicken!
