Cuban Water Bread

Ingredients

  • 2 Tbsp. sugar
  • 2 Tbsp. dry yeast
  • 1 Tbsp. salt
  • 2 c. lukewarm water
  • 6 c. unbleached all-purpose flour

Instructions

  1. Dissolve yeast, salt and sugar with some of the water.
  2. With wooden spoon, beat flour into rest of water until you have a batter.
  3. Pour in yeast mixture and mix.
  4. Add flour until right consistency.
  5. Knead.
  6. Cover bowl with a damp cloth (after putting mixture into bowl).
  7. Let rise.
  8. Punch down.
  9. Divide into 2 round loaves.
  10. Put on greased baking sheet.
  11. Sprinkle loaves with cornmeal.
  12. Let rise 5 minutes.
  13. Cut a cross on top with sharp knife.
  14. Put pan in cold oven with cake
  15. pan of boiling water on bottom of oven.
  16. Bake at 400° for 45 minutes.
  17. Serve at once.
