- Beat cream about 1 1/2 cups at a time, until thick.
- Combine sugar and egg yolks and beat well.
- Blend into cream.
- Then blend in brandy.
- Beat egg whites until rounded peaks are formed and fold into cream mixture.
- It may require more sugar according to taste.
- Sprinkle with nutmeg.
