Easy Fruit Juice Tapioca Pudding

Ingredients

  • 2 1/4 teaspoons minute tapioca
  • 1 pinch salt
  • 1/2 cup pure unsweetened apple juice or 1/2 cup unsweetened orange juice (or any other fruit juice)
  • 1/2 cup corn flakes

Instructions

  1. Mix tapioca, salt and fruit juice in a small saucepan.
  2. Let it stand for 5 minutes.
  3. Cook on medium heat stirring constantly until mixture comes to a full boil.
  4. Remove from heat (The pudding thickens as it cools).
  5. Cool 20 minutes, and stir.
  6. Top with corn flakes and fresh fruit for a yummy, healthy snack.
  7. You can have this warm or chilled-- I like it chilled!
