Ingredients

  • 2 garlic cloves, crushed
  • 1 tablespoon mint, chopped
  • 1 tablespoon flat leaf parsley, chopped
  • 1 lemon rind, grated
  • 1/2 teaspoon Dijon mustard
  • 4 tablespoons olive oil

Instructions

  1. Mix every thing together in a small bowl and allow to rest for at least 10 minutes before serving.
  2. This can be made a day ahead but recommend bring to room temperature before serving.
