Easy Icebox Rolls

Ingredients

  • 1 pkg. dry yeast
  • 3 Tbsp. warm water
  • 2 eggs
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1/2 c. shortening
  • 1 c. lukewarm water

Instructions

  1. Dissolve yeast in warm water and set aside.
  2. Beat eggs in large bowl.
  3. Add yeast mixture.
  4. Add flour, 1 cup at a time, mixing well after each addition.
  5. Cover dough with waxed paper and refrigerate overnight (or at least 4 hours).
  6. Two or three hours before baking, take out dough and knead for 3 minutes.
  7. Roll out for dinner rolls.
  8. Cut out with biscuit cutter.
  9. Grease center of circle with table knife.
  10. Put a tiny dot of butter in center of crease and fold over for pocketbook rolls; let rise.
  11. Bake at 400° for 10 minutes.
  12. Makes 24 rolls.
