Creamy scallop potatoes feature tender sliced potatoes baked in rich milk and butter, creating a comforting side dish perfect for family dinners or special occasions.

Ingredients

  • 1 1/2 qt. sliced potatoes
  • 3 to 4 Tbsp. cornstarch
  • 1 qt. milk
  • 2 to 4 Tbsp. butter

Instructions

  1. Peel and slice the potatoes.
  2. Scald the milk with butter.
  3. Put the sliced potatoes in a buttered, 2-quart casserole.
  4. Mix the potatoes with dry cornstarch (or half flour and half cornstarch).
  5. Pour the scalded milk over the potatoes.
  6. Bake at 350°F for 45 minutes to 1 hour.
