Egg Custard Tartlets

- Preheat oven to 400°F. Grease 30 shallow muffin pan recesses.
- Sift flour and a pinch of salt into bowl. Cut in lard until mixture resembles fine breadcrumbs. Add 5 tbsp hot water and mix until combined. Knead lightly then roll out until 1/8 inch thick. Cut out 30 - 3 inch fluted discs and use to line prepared muffin recesses.
- Whisk together eggs and sugar. Gradually add milk then food coloring. Distribute between prepared tart shells and bake for 10 mins.
- Reduce heat to 350°F and cook for 10-15 mins, until just set in the center.
