Ingredients

  • 2 Cornish hens
  • 1 box chicken Rice-A-Roni
  • 2 c. water
  • 1 can cream of chicken soup

Instructions

  1. Split hens down middle.
  2. Brown rice only 15 minutes in large Pyrex dish at 375°.
  3. In separate bowl, mix water, package of seasoning from Rice-A-Roni and chicken soup.
  4. After rice browns, lower oven to 350°; put hens over top of rice (will sizzle).
  5. Pour mixture over hens; cover and cook 1 hour.
  6. Uncover 30 minutes to brown.
  7. Excellent side dish with this:
  8. cut up fresh apples with poppy seed dressing.
