Hickory Chicken

Ingredients

  • 1 large hen or fryer
  • 1 stick margarine
  • 1/4 c. liquid hickory smoke

Instructions

  1. In roasting pan, pour 2 to 3 cups of water and all but 1 tablespoon liquid hickory.
  2. Place roasting rack in pan.
  3. Place chicken on rack.
  4. Put stick of margarine inside chicken, then put 1 tablespoon of hickory smoke inside chicken.
  5. Cover tightly with aluminum foil.
  6. Place in 300° oven for 1 1/2 to 2 hours.
