Honey Mousse

- Separate the white from the yolk of the eggs.
- Then mix yolks with liquid honey.
- (If honey is set and thick, stand jar on piece of wood in warm or hot water, until it liquifies).
- Cook on very low heat, stirring constantly, or preferably in a double boiler, until the mixture thickens like a custard.
- Remove from stove and cool.
- Whisk egg whites until stiff and fold into the mixture. Pour into either individual dishes or one dish and chill.
- It should be left for several hours before serving.
