Honey Mousse

Ingredients

  • 1 lb. jar honey
  • 4 eggs, separated

Instructions

  1. Separate the white from the yolk of the eggs.
  2. Then mix yolks with liquid honey.
  3. (If honey is set and thick, stand jar on piece of wood in warm or hot water, until it liquifies).
  4. Cook on very low heat, stirring constantly, or preferably in a double boiler, until the mixture thickens like a custard.
  5. Remove from stove and cool.
  6. Whisk egg whites until stiff and fold into the mixture. Pour into either individual dishes or one dish and chill.
  7. It should be left for several hours before serving.
