Instructions
- Wash and drain the huckleberries.
- Simmer together 1 cup of huckleberries and 2/3 cup of water for 3 minutes.
- Blend the cooked mixture and add to boiling mixture the sugar, cornstarch, and 1/3 cup of water; boil for 1 minute, stirring constantly.
- Cool the filling.
- Save out 1/2 cup of huckleberries for garnish.
- Put the remaining 2 1/2 cups of huckleberries in the baked pie shell.
- Cover with the cooked filling and garnish with the remaining 1/2 cup of huckleberries.
- Refrigerate and serve with Cool Whip.
