Ingredients

  • graham cracker baked pie shell
  • 1 quart huckleberries
  • 2/3 cup water
  • 1 cup sugar
  • 3 to 3 1/2 tablespoons cornstarch

Instructions

  1. Wash and drain the huckleberries.
  2. Simmer together 1 cup of huckleberries and 2/3 cup of water for 3 minutes.
  3. Blend the cooked mixture and add to boiling mixture the sugar, cornstarch, and 1/3 cup of water; boil for 1 minute, stirring constantly.
  4. Cool the filling.
  5. Save out 1/2 cup of huckleberries for garnish.
  6. Put the remaining 2 1/2 cups of huckleberries in the baked pie shell.
  7. Cover with the cooked filling and garnish with the remaining 1/2 cup of huckleberries.
  8. Refrigerate and serve with Cool Whip.
