Irish Potato Bread

Ingredients

  • 8 oz. mashed potatoes
  • 1 tsp. salt
  • 2 oz. butter
  • 4 oz. flour
  • milk

Instructions

  1. Combine all ingredients with a little milk to make a stiff dough.
  2. Roll out to 1/4-inch thick.
  3. Cut into shapes with a small round cutter.
  4. Cook on both sides on a hot plate or griddle until brown.
  5. Serve with lashings of butter, bacon and eggs.
