Irish Tea Bread

Ingredients

  • 475 g dried mixed fruit
  • 300 ml hot strong irish breakfast tea
  • 1/2 cup brandy
  • 250 g dark brown sugar
  • 2 eggs, lightly beaten

Instructions

  1. Soak fruit in the prepared tea overnight.
  2. When ready to bake, preheat oven to 150.C and grease & line a 20cm sqyare cake pan.
  3. Stir brandy & sugar into fruit mixture until dissolved and then stir in the eggs.
  4. Gradually fold in flour and spice and combine until mixture is smooth.
  5. Pour into a pan & bake for one hour.
  6. Remove from oven & cover with foil and bake for a further 30 minutes.
  7. Set aside to cool for approx 30 mins before turning out onto a cooling rack to cool completely.
  8. Store for 24 hours before slicing.
  9. Serve with butter & a cup of tea.
