- Place sugar, water, salt and cream of tartar in saucepan and bring to a boil.
- Cook 1 minute.
- Pour, while beating constantly, over unbeaten egg white.
- Beat until frosting holds up in a peak. Add vanilla anytime during beating.
- This frosting remains soft.
