Loaded Mashed Potato Biscuits

Ingredients

  • 5 strips Bacon
  • 2 whole Russet Potatoes, Peeled
  • 1 package (16.3 Oz. Size) Pillsbury Biscuits
  • 3/4 cups Sour Cream
  • 1/2 cups Green Onions, diced

Instructions

  1. Preheat oven to 350°F.
  2. Cook the bacon on the stove until crispy. Place on paper towel until cool and then crumble into small pieces.
  3. As the bacon cooks and fills your house with the best smell ever, boil the potatoes until tender.
  4. Cut each Pillsbury biscuit in half and roll into a ball. Place on the bottom of a baking dish (I used a 8 1/2" x 11" dish). There will be spaces in between the dough balls.
  5. Drain potatoes and mash. Mix in sour cream, green onions, bacon, and 1/2 of the cheddar cheese. Scoop loaded potatoes in between each rolled biscuit and top with remaining cheese.
  6. Cook for 30-35 minutes or until biscuits are golden brown and cheese is hot and melted. I cooked it uncovered for most of the time and then covered it at the end, for the last 5-10 minutes or so.
  7. Remove from the oven and serve. Just break pieces off and enjoy those loaded mashed potato biscuits. This is what dreams are made of.
