Loaded Mashed Potato Biscuits

- Preheat oven to 350°F.
- Cook the bacon on the stove until crispy. Place on paper towel until cool and then crumble into small pieces.
- As the bacon cooks and fills your house with the best smell ever, boil the potatoes until tender.
- Cut each Pillsbury biscuit in half and roll into a ball. Place on the bottom of a baking dish (I used a 8 1/2" x 11" dish). There will be spaces in between the dough balls.
- Drain potatoes and mash. Mix in sour cream, green onions, bacon, and 1/2 of the cheddar cheese. Scoop loaded potatoes in between each rolled biscuit and top with remaining cheese.
- Cook for 30-35 minutes or until biscuits are golden brown and cheese is hot and melted. I cooked it uncovered for most of the time and then covered it at the end, for the last 5-10 minutes or so.
- Remove from the oven and serve. Just break pieces off and enjoy those loaded mashed potato biscuits. This is what dreams are made of.
