Lotus Root Soup

Ingredients

  • 1 liter Water
  • 1 stick Lotus Root
  • 250 grams Pork Spare Ribs
  • 8 Red Dates
  • 6 Dried Oysters
  • 1 pinch Salt

Instructions

  1. Set a large pot to boil with the 1 litre of water. While waiting for the pot of water to boil, peel the lotus root, wash thoroughly and slice to desired thickness. Wash pork spare ribs, red dates and dried oysters and set aside.
  2. Once water has come to a boil, add all the ingredients (except peanuts) into the pot and lower heat to a simmer. Simmer for 1 1/2 hours. If you are using peanuts, add them in 1/2 hour before turning the heat off.
