Instructions

  1. Grease 12 (2 1/2 x 1 1/4 inch) muffin cups.
  2. Stir together flour, corn meal, sugar, baking powder and salt in a large bowl. Stir milk into mayonnaise in another small bowl.
  3. Stir milk mixture into flour mixture just until moistened.
  4. (Batter will be lumpy). Turn into prepared pan, filling each cup 2/3 full.
  5. Bake at 400° for 20 minutes or until golden; or bake in greased iron skillet in the oven at 400° for 25-30 minutes.
