Ingredients

  • leftover roast, cubed
  • 3 to 4 potatoes, cubed
  • salt
  • pepper
  • 1 large onion, diced

Instructions

  1. Use leftover roast and cut it into small chunks.
  2. Chop 3 to 4 potatoes into cubes and boil with salt and pepper; do not overcook.
  3. Saute the diced large onion in butter in a large skillet.
  4. Add the cooked potatoes to the skillet with onions.
  5. Prepare gravy using the juice from the boiled potatoes or use a brown gravy mix to thicken.
  6. Add the meat last into the skillet with the potatoes and gravy.
  7. Bake biscuits separately and split them open.
  8. Pour the hash mixture on top of the split biscuits before serving.
