Mexican Enchilada

Ingredients

  • 1 1/2 lb. hamburger
  • 1 small onion
  • 2 pkg. taco seasoning mix
  • 2 pkg. flat round corn tortilla chips
  • 1/2 lb. Velveeta cheese
  • 2 tomatoes
  • 1/2 head lettuce
  • sour cream

Instructions

  1. Brown hamburger in skillet; drain fat.
  2. Stir in 1 package taco seasoning mix with 1/2 cup water.
  3. Simmer for few minutes.
  4. In a 9 x 13-inch pan, layer seasoned meat, diced onion, corn tortilla shells (the flat round shells), then Velveeta cheese, then hamburger, onions, shells cheese, etc.; on the last layer, pour a 1/2 cup of seasoning over the shells to soften them so they don't dry out in the oven.
  5. (Seasoning Mix = 1/2 package taco seasoning mix in a 1/2 glass water, stir up.)
  6. Cook for 20 to 25 minutes at 300°.
  7. Serve with salad or top with tomato, lettuce and sour cream.
