Mexican Enchilada

- Brown hamburger in skillet; drain fat.
- Stir in 1 package taco seasoning mix with 1/2 cup water.
- Simmer for few minutes.
- In a 9 x 13-inch pan, layer seasoned meat, diced onion, corn tortilla shells (the flat round shells), then Velveeta cheese, then hamburger, onions, shells cheese, etc.; on the last layer, pour a 1/2 cup of seasoning over the shells to soften them so they don't dry out in the oven.
- (Seasoning Mix = 1/2 package taco seasoning mix in a 1/2 glass water, stir up.)
- Cook for 20 to 25 minutes at 300°.
- Serve with salad or top with tomato, lettuce and sour cream.
