Mint Chip Pound Cake

Ingredients

  • 1 (16 oz.) pound cake mix
  • 2 eggs
  • 1/2 c. milk
  • 2 c. mint chocolate chips

Instructions

  1. Microwave 1/2 cup chips on Medium (50%) for 1 to 2 minutes. Stir until smooth.
  2. Combine chocolate with rest of ingredients. Beat 4 minutes with electric mixer.
  3. Fold in remaining 1 1/2 cups mint chips.
  4. Pour into 9-inch round pan.
  5. Microwave at 50% for 3 minutes. Then microwave on High for 3 minutes.
  6. This will use 3 cups batter.
  7. Sprinkle with chocolate powdered sugar.
