Minted Cherry Tomatoes

Ingredients

  • 2 pt. cherry tomatoes
  • 2 Tbsp. olive oil
  • 1/2 tsp. sugar
  • 1 tsp. dried mint
  • 1/4 tsp. salt
  • freshly ground pepper
  • 2 green onions, chopped

Instructions

  1. Toss tomatoes with oil, sugar and herbs. Bake at 350° for 15 minutes. Toss green onions with tomato mixture.
  2. Use leftover in sauces and soups.
  3. Serve with toothpicks for relish tray.
