Ingredients

  • 1 (10 oz.) pkg. frozen red raspberries, thawed
  • 1/2 (3 oz.) pkg. (about 1/4 c.) raspberry-flavored gelatin
  • 1/2 c. boiling water
  • 1/2 c. cold water
  • 1/4 tsp. finely shredded lemon peel
  • 1 Tbsp. lemon juice

Instructions

  1. Sieve the raspberries; discard seeds.
  2. Set berries aside. Dissolve gelatin in the boiling water.
  3. Stir in cold water, lemon peel and lemon juice.
  4. Stir in sieved berries.
  5. Pour mixture into an 8 x 4 x 2-inch loaf pan and freeze for 3 to 4 hours or until mixture is firm.
  6. Break into chunks and place in a chilled bowl. Beat mixture with an electric mixer until smooth.
  7. Return to loaf pan and freeze about 2 hours or until firm.
  8. Makes 5 servings.
