- Sieve the raspberries; discard seeds.
- Set berries aside. Dissolve gelatin in the boiling water.
- Stir in cold water, lemon peel and lemon juice.
- Stir in sieved berries.
- Pour mixture into an 8 x 4 x 2-inch loaf pan and freeze for 3 to 4 hours or until mixture is firm.
- Break into chunks and place in a chilled bowl. Beat mixture with an electric mixer until smooth.
- Return to loaf pan and freeze about 2 hours or until firm.
- Makes 5 servings.
