Instructions
- Bring the sugar and honey to a boil; boil them for 10 minutes. Slowly add
- the nuts.
- Cook the mixture until it is thick, until the candy thermometer registers the soft-crack stage.
- Spoon the mixture out onto a wet marble slab or wooden board.
- Dip your hands in ice water and pat the mixture into a square, about 1-inch thick.
- Let the square cool slightly.
- Using a sharp knife, cut into squares or diamonds.
- Yields about 2 1/2 pounds.
