Ingredients

  • 1/2 c. sugar
  • 1 1/2 lb. walnuts or pecans, chopped
  • 2 c. honey

Instructions

  1. Bring the sugar and honey to a boil; boil them for 10 minutes. Slowly add
  2. the nuts.
  3. Cook the mixture until it is thick, until the candy thermometer registers the soft-crack stage.
  4. Spoon the mixture out onto a wet marble slab or wooden board.
  5. Dip your hands in ice water and pat the mixture into a square, about 1-inch thick.
  6. Let the square cool slightly.
  7. Using a sharp knife, cut into squares or diamonds.
  8. Yields about 2 1/2 pounds.
