Orange Marmalade Mousse

Ingredients

  • 3 whole oranges
  • 3 tablespoons orange marmalade
  • 6 tablespoons double cream
  • 2 tablespoons icing sugar

Instructions

  1. Slice the tops off the oranges and hollow out the orange, removing the pips from the orange flesh.
  2. Finely chop the flesh and mix with the icing sugar.
  3. Whip the cream until nearly hard and add the orange mixture, mix well, then gently fold in the marmalade.
  4. Spoon the mixture back into the hollowed shells, replace lid and chill slightly before serving.
