Papaya ball

Ingredients

  • 2 cup grated green papaya
  • 1 cup sugar
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/4 cup sugar

Instructions

  1. Cut open papaya -scoop out seeds and peel ...grate---it will look like fine shreds ( I used a handheld grater)
  2. Squeeze out some of the juice from the shredded papaya .
  3. In a pot over medium heat add the shredded papaya, the sugar , the lemon zest and lemon juice
  4. Cook until the mixture gels ( all liquids should be dried up)as shown in step pic---put into a dish and let cool completely
  5. Shape into balls and roll into the cinnamon sugar coating.
  6. It can be enjoyed right away or can be placed in the fridge for 30 minutes !!
