Perfect Poached Pears

Ingredients

  • 6 bosc pears or similar, hard pears (bartlett works well)
  • 1 1/4 cup sugar
  • 4 cups (1 quart) water
  • 6-8 peices lemon zest removed with a vegatable peeler in 2 inch strips

Instructions

  1. First, peel the pears with a vegetable peeler and remove the cores. Bring water, 3/4 of a cup of the sugar, ginger and the lemon to a boil, making sure not to let the sugar burn. Lower heat and add pears.
  2. Let cook 20-30 minutes. The cooking time depends on the pear type. The pears are ready when they are close to translucent.
  3. Remove the pears from the water and place in bowls.Add remainder of sugar to leftover cooking juice, heat and stir, about 5-6 minutes so sugar disolves and a syrup of sorts is left. Spoon sauce over pears and add lemon rind to each bowl, because in the sugar the lemon will have preserved. Serve imedietly.
