- Mash baked potato (remove skin) with a fork, leaving no lumps. Add confectioners sugar, a little at a time.
- This mixture will become watery, so keep adding the sugar.
- Once mixture is firm, but no longer sticky, roll flat (as you would biscuits).
- Spread the peanut butter to a desired thickness.
- Roll into a long log and slice 3/4-inch pieces.
- If you wish to make a larger amount, make more logs, but do not try to make a larger initial mixture.
