Pinwheel Potato Candy

Ingredients

  • 1 medium size potato
  • 1 lb. confectioners sugar
  • 1/2 qt. creamy peanut butter

Instructions

  1. Mash baked potato (remove skin) with a fork, leaving no lumps. Add confectioners sugar, a little at a time.
  2. This mixture will become watery, so keep adding the sugar.
  3. Once mixture is firm, but no longer sticky, roll flat (as you would biscuits).
  4. Spread the peanut butter to a desired thickness.
  5. Roll into a long log and slice 3/4-inch pieces.
  6. If you wish to make a larger amount, make more logs, but do not try to make a larger initial mixture.
