Plum & Date Chutney

Ingredients

  • 2 large red onions, sliced
  • 4 tablespoons olive oil
  • 12 ounces plums, halved,stoned and thickly sliced
  • 2 ounces fresh dates or 2 ounces dried dates, stoned and finely chopped
  • 1 tablespoon light muscovado sugar, more to taste
  • 1 large red chile, seeded and finely chopped

Instructions

  1. Preheat grill and line the grill pan with foil.
  2. MIx the onions and oil and spread them out in the pan.
  3. Grill for 12-15 minutes or until soft and charred.
  4. Put the plum slices into a large bowl and add the hot onions with all the reamining ingredients.
  5. Leave to marinate for 1 hour, then taste and add salt and pepper, plus a little extra sugar if you like.
  6. Goes great with cold meats or stuffed into a pitta bread with a strong cheese.
