Poached Halibut

Ingredients

  • 3 c. water
  • 1/2 c. white wine
  • 1 tsp. salt
  • 1 bay leaf
  • 6 peppercorns
  • dash of thyme, crushed
  • 1 sprig parsley

Instructions

  1. Combine water, wine, salt, bay leaf, peppercorns, thyme and parsley; bring to boil.
  2. Add halibut.
  3. Reduce heat; cover and simmer 10 minutes per inch of thickness measured at its thickest part or until halibut flakes easily when tested with fork.
  4. Gently remove halibut and drain.
  5. Serve hot or chilled.
  6. Garnish with cucumber slices.
  7. Serve with Creamy Cucumber Dill Sauce.
  8. Makes 4 to 6 servings.
