- In a large saucepan, combine water, sugar, vanilla bean and cinnamon stick. Stir over a low heat, without boiling, until sugar dissolves.
- Bring to a boil over high heat. Reduce heat to low and simmer, without stirring, for 2 mins. Remove from heat.
- Place strawberries in a bowl and pour over the hot syrup. Allow to cool. Serve with whipped cream if desired.
