Poke Salad

Ingredients

  • 1 1/2 c. poke salad, cooked
  • 1 tsp. salt
  • 3 Tbsp. oil
  • 3 or 4 eggs

Instructions

  1. Pick poke salad greens.
  2. Clean greens.
  3. Cook until tender in a saucepan.
  4. Heat oil in a skillet; drain off water and add greens to skillet.
  5. Add salt and eggs when water has cooked away.
  6. Stir until the eggs have cooked.
  7. Happy eating!!
