Potato Mounds

Instructions
- Bring the water, 3 tablespoons margarine, salt and milk to a boil.
- Remove from heat and add the potato flakes.
- Cool the mixture a little and add the 2 well-beaten eggs.
- Mix well.
- Use an ice cream scoop and place mounds on a jelly roll sheet. Drizzle the melted 1/4 cup of margarine over the mounds and broil 3 inches from heat for 4 to 5 minutes.
- Makes about 10 servings.
