Potato Mounds

Ingredients

  • 2 1/2 c. water
  • 3 Tbsp. margarine
  • 3/4 tsp. salt
  • 3/4 c. milk
  • 3 1/4 c. mashed potato flakes

Instructions

  1. Bring the water, 3 tablespoons margarine, salt and milk to a boil.
  2. Remove from heat and add the potato flakes.
  3. Cool the mixture a little and add the 2 well-beaten eggs.
  4. Mix well.
  5. Use an ice cream scoop and place mounds on a jelly roll sheet. Drizzle the melted 1/4 cup of margarine over the mounds and broil 3 inches from heat for 4 to 5 minutes.
  6. Makes about 10 servings.
