Potato Snowballs

- Grate about 6 potatoes on the fine side of your potato grater. Strain the grated potatoes through cheesecloth, squeezing fairly dry.
- Save the liquid and allow it to settle.
- Pour off the water and save the starch that settles in the bottom of the container. Add this starch to the grated potatoes and add one egg.
- Season with salt and pepper and add flour as needed, mixing well.
- Shape into balls and drop into boiling, salted water.
- Boil 15 to 20 minutes.
- Remove and drain.
- Pour milk and butter or fried bacon over snowballs and serve warm.
